Gir is an indigenous Indian cow breed. Its milk contains A2 beta-casein protein, which is the type of milk Indian households traditionally used before higher-yield crossbred cattle became common. Most packet milk today comes from crossbred herds.
Beyond the breed, the difference is in how the animals are kept. Ours graze in open space, feed on organic green fodder, and are never given growth hormones.

The cows are milked early each morning. The milk is chilled straight after milking, packed the same morning, and delivered the same day. Nothing is added, nothing is removed, and it is never reconstituted from powder.
It is made by the bilona method, which starts with curd rather than cream. The milk is set into curd overnight, the curd is hand-churned to draw out white butter, and that butter is slow-heated into ghee.
That process needs significantly more milk per kilogram than the commercial method, and it takes far longer. We also make it in small batches with no additives, preservatives or colour.
